Sweet Potato Chicken Sliders with Horseradish Honey Mustard

Yield 4 Sliders

These cute little sliders are packed with flavor - sweet, savory, tangy, and just the right amout of spicy!  A fun spin on grilled chicken and a great way to ditch the bun.

  1. Mix the apple cider vinegar, 1/4 cup avocado oil, mustard powder, garlic powder, onion powder, sea salt, black pepper, and 1 tsp of honey in a small bowl to create the marinade.
  2. Pour marinade over chicken breast in a shallow dish and allow to sit for at least 2 hours.
  3. Preheat your oven to 350 degree F.
  4. Toss sliced sweet potatoes in 1 Tbsp avocado oil and a sprinkle of sea salt, then spread out on a baking sheet and place into oven.
  5. Bake sweet potatoes for 15 minutes, then flip and bake an additional 15 minutes.  Remove from oven and allow to cool.
  6. Preaheat grill.
  7. Grill the chicken on low for 10 minutes, then flip and grill an additional 15 minutes.
  8. Allow chicken to rest for 5 minutes before cutting into 4 smaller pieces.
  9. Mix Horseradish Mustard with 2 1/2 Tbsp. honey and set aside.
  10. Layer sweet potato rounds with Horseradish Honey Mustard, lettuce, chicken, avocado, and more Honey Mustard sauce, then top with the second sweet potato round.  Use a small skewer to keep them together.  Enjoy!

  1. Choose a sweet potato that's thicker around the middle, to have larger rounds as your bun.
  2. When cutting the chicken into smaller pieces, try to get it the size of your sweet potato rounds.  Save any scraps for snacks or salads!
  3. To make these Whole30 just use the Horseradish Mustard on it's own, without adding any honey.
